Like many of the world’s great chefs, Chef Gerardo’s culinary journey to one of the top Loreto Mexico resorts began in Mexico City, both the capital of Mexican cuisine and an international melting pot, with the role of cold table chef at Casa de Campo, a boutique restaurant and hotel in the capital city. As his talents in the kitchen grew, so did his reputation. During his time in Mexico City, Chef Gerardo participated in several international culinary events alongside culinary legends including Vicente Etchegaray, Thierry Doufort, and Olivier Lombart, all members of the exclusive Vatel Club of chefs in Mexico. With the lessons he learned from these culinary giants, he advanced to sous chef at Casa de Campo, showing off his talent at whipping up both classic and innovative dishes.
Like any great artist, Chef Gerardo felt the need to expand his horizons, so he set his sights towards Loreto Baja California. His jobs ranged from garde manager to banquet chef.
