The garden, which takes up 72 square meters of the resort’s property, is tended to by Francisco Javier Murillo, who ensures that the garden is taken care of and that the organic composting used to feed the garden, another of the resort’s ecological initiatives, is done correctly. Under his guidance, more than 25 different crops flourish at the resort and the bounty is mouthwatering.

What’s Grown in the Garden

The gardeners at Villa del Palmar have successfully grown a variety of vegetables, fruits, and aromatic herbs, all of which is used in the fresh cuisine and beverages served at the resort. From salads to margaritas, guests can expect to find what is grown at the resort in their day to day meals.

Vegetables: Spinach, Beets, Radishes, Cilantro, Epazote, Variety of Chilies, Cambray Onions, Chives, Squash.

Fruits: Watermelon, Canteloup, Cherry Tomatoes, Saladette Tomatoes, Olive, Orange tree, Pomegranate, Mango, Cucumber.

Aromatic Herbs: Basil, Lavender, Rue, Rosemary, Peppermint, Mint, Thyme, Oregano.
